This process is very common in Indonesia and is often known as 'wet milling'. The semi washed process involves twice the drying process. After being picked, the outer skin of the coffee cherries is peeled using a depulper and dried briefly. If in general the coffee moisture is left up to 11-12% during the drying process, then in the semi-washed process, the coffee moisture is left up to 30-35% before peeling again until the shape is really the seeds / green bean. Well, this green bean is then dried again until it is completely dry enough to store.
General taste profile: Semi-washed coffees tend to have an intense sweetness, fuller body, with lower acidity than washed processed coffees.
