Wine Coffee is the result of natural fermentation and the process is certainly not haphazard. Coffee that grows at an altitude of 1500 meters has a different harvest time with coffee that grows lower. At harvest time the number of fruit is not as much as other coffee. Coffee beans are usually separated first with the skin then dried. But for this type of variant, coffee is dried together with thicker skin for about 60 days, some even up to 145 days, until it is completely dry. The sap contained in the skin of this coffee is absorbed into the coffee beans during the fermentation process. Arabica coffee which does have higher acid levels becomes more acidic due to the absorption of the sap so that the resulting coffee taste is similar to wine, the result of wine fermentation.
